Chocolate Dipped Peanut Butter Stuffed Dates
If you’re like me + need some sort of sweet treat most afternoons, these chocolate dipped peanut butter stuffed dates will be your new BFF. They genuinely taste like mini frozen Snickers bars. Added bonus: they serve up some healthy fat + fiber from the nut butter and dates. The dark chocolate is just plain good for the soul.
You know I’m all about non-recipes. Fortunately these only require three ingredients and call for less than 10 minutes of hands-on work. Double win. Special thanks to @SproutingVitality for this idea!
CHOCOLATE DIPPED PEANUT BUTTER STUFFED DATES
INGREDIENTS
Dried medjool dates (however many you want to make)
Nut butter of choice (I used PB)
Dark chocolate (chips or a bar, doesn’t matter!)
DIRECTIONS
Cut dates almost totally in half, leaving one side connected, remove pit.
Slather the center of the dates with your nut butter of choice, then pinch the open sides back together to close the dates back up.
Microwave some dark chocolate in a bowl until melted. I’m leaving the amount up to you! But melt enough to fully coat however many dates you’re dipping.
Dip the chocolate dipped peanut butter stuffed dates into the melted choc, coating them entirely.
Transfer your dipped dates to a plate + freeze for 1 hr. Then, ENJOY (or continue to store in freezer until ready to eat).
