Spaghetti Squash Boats w/ Turkey Bolognese

 

I recently shared this quickie meal on Instagram and figured it was worthy of a blog post. Because it takes less than an hour to pull together and is the perfect dish for cozy autumn nights. Let’s get cooking!

Spaghetti Squash Boats w/ Turkey Bolognese

RECIPE

Serves : 3 (Perfect for dinner for 2 + a lunch of leftovers!)

1 spaghetti squash, sliced in half length-wise

Olive or avocado oil

1/2 sweet onion, diced

1 clove garlic, minced

14 oz. organic + unsalted whole, peeled tomatoes (I used half of a 28-oz. can)

8 oz. package organic ground turkey (I used half of a 16-oz. package)

Add-ins: dried oregano, fresh basil, red wine vinegar salt, pepper


  1. Preheat oven to 425 F.

  2. Cut squash in half lengthwise (make sure you have a super sharp knife for this! It actually makes it easier/safer) and drizzle cut side with oil, salt + pepper. Roast the halves cut side up at 425 F for 45 mins, or until a fork can easily be inserted into center of squash.

  3. While the squash is roasting, sauté the onion and garlic with oil in a pan on medium heat, stirring occasionally. Once fragrant and onions translucent, add tomatoes to pan.

  4. As the sauce starts to bubble and thicken, add raw ground turkey. Use a utensil to break up the meat in the pan. (NOTE: I also added some cooked eggplant I had lying around at this step. Feel free to do the same, or throw in some already-cooked mushrooms or peppers if you have them.)

  5. Stir often + season throughout, adding a dash of dried oregano, red wine vinegar, salt, pepper, and a few ripped leaves of fresh basil along the way, if you so choose. These are all optional, but definitely help to up the flavor profile.

  6. Cook until the meat is opaque and the sauce is bubbling throughout. Keep sauce at a simmer until squash is ready.

  7. Once squash is done, remove from oven, scrape inside to shred into “spaghetti” and fill each half with sauce. Top it off with grated parmesan cheese + more fresh basil.
